Summer Endings

Life has been pure insanity for Nick and I these last few months and now we're gearing up for school to start again, selling our house and autumn harvest.

What's happened since our last blog post:

  • Finished last two weeks of summer camp and loved every second of it!  My second week at camp was with a new group of the 4-6 year olds, however, I was able to team up with Carlsen again for a rockin' time.  My second week was with a new instructor (2 in fact and I even filled in as an instructor for a day!!) and 7-12 year olds.  We had a ton of fun together and learned so much from each other.  Cannot wait to make this my future career.
  • Finished our hallway project and started/finished our master bedroom project; ready to list our house for sale now.  It's hard to think of leaving all of our blood, sweat and tears, but this is the best move for Nick and I and we're excited about these changes.
  • Continued working on our garden and preserving away like mad.  We've put up peaches, blueberries, strawberries, raspberries, beans, peas, squash and tomatoes. My squash is coming on thick and I am trying to find out creative ways of cooking it because I must admit I am sick of preserving and canning.  I'm also drowning in greens from our CSA box - I think Nick and I have eaten our weight in quiches in the last few weeks trying to polish off the rainbow chard and swiss chard.  Plus I made a huge lasagna and these amazing enchiladas.  I'm excited for the cooler weather so I can start whipping out some soups!
  • Enjoyed family time in St. Maries, ID, and a family friends' wedding.  Also enjoyed another great weekend in Spokane with friends.

Lots of changes happening in the next few months, but we are excited for the changes and looking forward to what the future holds.

Latest Happenings

A lot more has happened in the last few weeks and I decided I should hop on my blog and do some updating!!

  • I went to Walla Walla for a wonderful weekend with family.
  • Nick and I took a weekend trip to Spokane for an epic weekend that shall go down in history.
  • We started remodeling our hallway and put in new carpet in the house (Just have to finish the stair rail).
  • I completed my first week of summer camp/research for grad school!!  It was an utter blast to spend a week at Oxbow Farm as a volunteer through their partnership with the Wilderness Awareness School.  This first week was filled with 6 hours per day (4 hours with the kids in attendance), 5 days per week hanging out with and teaching 4-6 years olds about farming, food and nature.
  • Continued our gardening and joined the Oxbow Farm CSA (community supported agriculture).  We got our first box this week filled with fennel, broccoli, cauliflower, squash, lettuce and rainbow chard.  We've also been putting up peas, strawberries, cherries and raspberries.

  • I started working at the Bellevue Children's Surgery Center and am loving a more flexible schedule, closer to home, better hours and finally taking care of patients again!
  • Big changes a comin' - Nick and I have decided to sell our house and move into a rental apartment or town home.  We are looking to find our 'freedom' in our jobs, our mobility and our lives.  Once I'm done with my last year of grad school we'll see where we go from there.
More updates coming soon!!  Hope you are all having a beautiful and blessed summer.

It's a Small World...

The title of my last post was, "Final Snow Days" and while the snow is long behind us apparently spring/fall has continued to cling to the area. We've been hounded by rain, wind and cold temperatures with a few small hints of summer. Despite this my garden is growing and we are striding into the harvesting and preserving season. We've picked the first few summer peas and strawberries from our own garden patch, but in order to put up enough of what we need for the winter I am supplementing from our local market. Today Nick and I prepared 10 pints of strawberries (from the market) for freezing - just need to bag them; from our garden we harvested a big container of lettuce, a small container of peas, some handfuls of strawberries and 4 trays full of oregano for the dehydrator. The roses are blooming, squash are growing, potatoes re-sprouted, carrots and parsley almost ready for seed saving and life abounds on our little space.

We have been talking more and more about trying to sell our place to buy property and begin farming, but the cards seem stacked against us. For now we will be content in our small space and keep putting in as much edible landscape as possible. We'll be putting in fruit trees and blueberry bushes this summer and installing Mason Bee boxes for pollination. If you want to know more about Mason Bees, here's a good spot to visit: http://www.crownbees.com/.

There's been so much going on since my last post:

  • Finished first year of grad school

  • Worked on a biodynamic farm as an intern for ten weeks (Jubilee Farm) and could not have been happier!  Also realized how much more I need to learn about farming!!

Jubilee Farm - Online Slideshow Maker
  • Jack turned five years old.  We had a dog bed custom made for him from Unique Kreations for Dogs & Kats.  An awesome lady at Redmond Farmer's Market does all of the work by hand from reclaimed fabric/textiles/foam from furniture and textile companies in the area.

  • Redmond Farmers market season began

2012 Farmers Market - Online Slideshow Maker
  • Put in and began harvesting from our garden

2012 Garden - Online Slideshow Maker
  • Attended volunteer training for 3 weeks of summer camp and research through the awesome partnership of Oxbow Farm and Wilderness Awareness School
  • Attended the Jubilee Farm May day festival and Oxbow Farm's Sowdown

I'm sure I've forgotten something, but I'll save that for a later post!  Hope to hear from and see many of you this summer; I know I'm not great about responding to e-mails right now, but think of you often and appreciate your love and support.

Here's to sunshine, summer treats and good eats!!

Final Snow Days

The snow started melting on Thursday night, then it started raining and created an epic slushy mess on the side roads. Here is the snowfall we had in about 6 hours on Thursday when the last flakes fell...

Friday night Nick and I took the Jeep out and did a little 4-Wheelin' City Style. It was epic fun!!

Sad that the snow is melting, happy for the improvement of our water table and thrilled to not be shoveling the driveway every day!

Winter Wonderland

If you haven't seen the news or heard from friends/family living in the Pacific NW we are being slammed by an epic snowstorm - IT...IS...AWESOME!!!! I love driving in the snow, being outside in the snow, watching Jack in the snow and laughing at Nick being a kid. Thought I'd share some pictures of some of the epicness going on around here.

Here are some more from today and it's still coming down!

Enjoy the white stuff!!

What If...

Christmas - the Old English dictionary defines it as "Christ's Mass". However, as I drive through the traffic each day, listen to horns honking, hear how much people spend on gifts ($1,200 from one of my co-workers), watch the impatience, read the signs of those standing on street corners and become more distraught over the commercialization of Christmas I have begun to wonder how much Christ occupies the season of Christmas.

Yes, I am a Christian and I believe that Christ exists, but somehow when we begin to shop for Christmas in June, put up Christmas trees in November and spend money we do not have on things people do not need I have begun to wonder how much "Christ" is still part of the celebration of "Christmas". I have been thinking...

What If...
  • Families ate Christmas dinner together, around a table, with the TV off
  • Rather than eating a huge Christmas dinner you served dinner to someone who was only able to eat once a day
  • The $1,200 spent on Christmas was donated to an organization working to make a difference in the world
  • Barbara Walters' 10 most fascinating people of 2011 did not feature the Kardashian's, celebrities or any other person regaled in the headlines; but rather focused on the people working to pay their bills every month, provide an education for their children, those doing the jobs the rest of us are not willing to do
  • We stopped watching reality TV shows and started living in the real world
  • Rather than interacting with technology we interacted with our friends and loved ones surrounding us
  • We said we were sorry, accepted responsibility and forgave
  • Rather than send out cards we called those people
  • Instead of wrapping gifts we planted a tree

Whether you believe in Christ or not, there is still meaning surrounding this time of year and I wonder what the world would look like if we simply embraced the meaning.

Fall/Winter or Flinter Season

We had our first, and so far only, snow fall in November and it stuck around for quite a bit. Jack enjoyed his customary snowball catching and then puking cycle and enjoyed leaping around catching snowflakes.

Nick and I went to Walla Walla for Thanksgiving and enjoyed time with family and friends. We ate way too much amazing food, froze to death in the arid, winter environment that is WW in November and even worked on some homework. It is so nice having my grandparents from Alaska living near my parents now and having the ability to spend holidays with them is really special. I took a few shots of their new home, with the new big trees and the iconic moose antlers.

Nick and I have kind of distanced ourselves from the Christmas insanity this year, but we did enjoy walking around Country Village - a quaint, festively decorated, chicken/duck occupied, adorable hangout. We also attended a wonderful celebration of a GI doctor I work with and his years of service at Seattle Children's. It was so much fun to dress up and hang out with friends and co-workers!

No matter how or what holiday season you are celebrating, we want to wish you a fabulous one!!

Long Time Coming...

I know, I know - I haven't blogged since September; however, I have a pretty good excuse! I thought I'd just show some glimpses of what has been happening over the last few months since I started school...

I started my Masters degree at the end of September and have hardly had a chance to lift my head out of the books except to go to work and try and spend time with Nick. This first quarter was the hardest thing I've ever done!! I'm learning so much and with this program being completely different from nursing I feel as though I'm learning a new language - I'm being challenged in my thinking, my beliefs, how I view the world and engage with everything around me. I am looking forward to next quarter and taking my first elective (Environmental Politics) that is geared towards the goals I hope to accomplish with this degree; next quarter I'll also be spending some time out at Jubilee Farm with Erick and Wendy!! I thought I'd share a few photos of some of the study stations I've been occupying this quarter (the carolers were a "bonus" at one of our group project work sessions!):

One of the crazy things at the UW Bothell Campus is the nightly bird horror show. It's like being on the set of Alfred Hitchcock's The Birds. We're not sure where the crows come from or why they choose to cover nearly every surface each night at UWB, but it is quite the freak show!!

The big event that happened during this quarter was that I sold my lovely Jeep and bought a gorgeous 2012 VW Jetta Sportwagen TDI. I could not be happier!! This car embraces everything Nick and I are trying to do with being green, saving fuel and creating a healthier environment. The kicker - I have bought 3.5 tanks of diesel after putting almost 1,800 miles on this baby. So thrilled!!

Nick and I were so privileged to attend a book release for this really amazing lady that I met at work one day! Her name is Erika Klimecky and she spent a month traveling the Everest Highway with a group of musicians raising money and awareness for the 7 Summits Foundation. This lady has inspired me so much and you should check out her website here and her husband, Chris', music here. You can also see Clint McCune's work through Soul Food Books here. This is such a great group of people!

I think those are the main highlights of the quarter, but stay tuned for more great things to come!!

Cycle the WAVE

A year ago, while sitting at a restaurant with my girlfriend, Connie, she told me about a cycling ride that she wanted to participate in and asked if I would be interested in riding as well. I completed some research and decided that it would be a fun ride with a great cause. Cycle the WAVE (Women Against Violence Everywhere) is a local ride that helps raise awareness and funds for the fight against domestic violence. It is a ride for women only and has 4 mileage breakouts to choose from. There are some sweet swag bags, beautiful jerseys, fun t-shirts and lots of wonderful volunteers to help out on the big day.

Sometime in June I decided to start training for this ride and over the last few months have completed the following:

  • 485.8 miles training

  • 44.55 hours in the saddle

  • 2 falls - one a Charlie Chaplin moment, the second left me with some severe road rash, bruises and scars

  • Two flats

  • Greater confidence in road riding

  • All culminating in:

  • One day

  • 6:09:31 finishing time

  • 3 flats

  • 61.5 miles

  • 4 liters nutrition consumed

  • 4,177 feet elevation gain

  • Title obtained: Burly Girl!!

Not sure if I'll do this ride again; there were quite a few things I did not appreciate about the ride. If I did do it again I would only do the Middle Sister ride (42 miles) and I would ask my mom to accompany me! There was a definite sense of satisfaction that I completed one of the hardest things in my life, but still some feelings of frustration and definitely some sore muscles. Nick was so sweet and was at every rest stop to help trade out my nutrition bottles, provide his coat to keep me warm, check my bike and cheer me on. I would not have been able to finish this ride without his support - thanks babe!!

Back to school

It's finally here!! Most everyone else - grade school, elementary school, high school have all started their classes, but college is finally ready to begin. I am headed back to school on September 27th to begin my Masters degree. I intend to obtain a Master of Arts in Cultural Studies (MACS) from the University of WA, Bothell (my BSN alma mater). The first question everyone asks is, "What are you going to do with this degree?" I am sooo excited about what I want to do!! I'm shifting from nursing to a more health/wellness and education career. I want to work with kids and help with teaching them about gardening, farming, health and wellness. Our earth is dying and I want to be a part of something to change that by returning to our roots - literally. I'm hoping to work with the amazing group Seattle Tilth or with a CSA that focuses on educating kids about farming, gardening and our earth.
In two years, who knows where I'll be - I just hope it involves being outside more!!

Would you?

If I did not speak your language would you exclude me from the conversation?
If my skin was another color would you make sure not to touch me?
If I could not hear would you speak louder?
If I did not earn as much as you would you think me uneducated?
If I was dirty would you cross the street to avoid me?
If I had a disability would you think I was handicapped or disabled?
If I believed in a Higher Power would you think I was weak?
If I danced in the rain would you be embarrassed of me?
If I chose to leave a career for a dream would you think I had lost my mind?
If I believed in something that you did not would you discount my credibility?
If I was tough would you think me unable to feel?
If I experienced great tragedy would you think me unable to love again?
Would you accept me for who I am?

Summer Delights

Every time we walk out on the patio we say it, "Why didn't we do this 6 years ago - we have missed out on so much!!". I guess you learn from your mistakes - right? Nick and I finished the patio with this beauty, put the furniture out and have stopped watching TV and spend evenings eating dinner outside or reading or laying reveling in the sunshine. A few more touches and it will officially be DONE (adding flower pots and some lighting). Still want to have a backyard warming party, in the meantime though, stop over and put your feet in the grass and your behind on the patio furniture. We'll have a glass of wine and enjoy the last delights of summer!

Why I blog

There are some people in this world who are able to write down lovely words and create an image in your mind, bring a lump to your throat, tears to your eyes or make your day. Sometimes I feel as though I'm blessed on certain days with that ability and other times I feel as though I'm wading through mud. Those days where I read someone else's blog or see their background and want to just scrap mine! However, I read this beautiful blog post by one of my favorite blogs to follow and had to share her words for why we - I - blog.

"I am a blogger. I blog because even though I have chosen to be a stay-at-home mom, I have a voice and my voice matters. My memories matter. Someday, they will be all I have."

It's perfect and it says exactly why I blog and reminds me that even if only one person reads my blog that's o.k. It's my voice and I love having an outlet to share through. So have fun and start a blog!!

Bliss

I called Nick up one day while he was at work and asked if he thought he might be able to take a week off during August so we could go on a vacation. After agreeing we started planning and scheming and figuring out what we wanted to do. We've always loved road trips and enjoy seeing as much as we can while on vacation so we decided that we would complete a road trip - down to California and back home up the Pacific Coast Highway (Highway 1 and 101).

Our first day was the long haul down to California, about 13 hours drive; but we ended in gorgeous St. Helena, CA, and checked into our wonderful room at the Harvest Inn. In the morning we discovered that our hotel room overlooked a beautiful vineyard and we enjoyed a bountiful breakfast in the rose garden that also overlooked the vineyard. We spent the morning perusing the streets of St. Helena and ducking into almost all my favorite shops and I loved sharing my favorite places with Nick. We ate a delicious lunch at the Market restaurant and then headed back to our hotel where we spent the afternoon by and in the pool. That evening we had a couple's massage in the Redwood Grove in a gorgeous cabana. The evening was topped off by dinner at a local restaurant called Farmstead - the food was divine!
Tuesday was our dress up day - we spent the afternoon riding the Napa Valley Wine train and enjoying a divine 4 course lunch that was complimented by some scrumptious anniversary truffles. We had hired a driver (found out he and his wife's names were Ken and Barbie; he had also been the former mayor of St. Helena for 3 terms!!) to take us to the train and back to our hotel and after speaking with him we decided to book a wine tour after the train ride. He took us to two incredible wineries - Keever Vineyards and Fleury Winery where we sampled some amazing wines and enjoyed ourselves immensely. That evening we enjoyed dinner on our back patio overlooking the vineyard while eating delicious burgers and garlic fries from Gott's Roadside. The next day we had to check out of the gorgeous Harvest Inn and begin our journey north. We headed out of St. Helena and through Sonoma Valley, as we started up the highway Nick made a quick judgement and sailed off a side ramp and decided to take us up Highway 1. He could not have made a better decision!! We traveled through little bitty towns along the coast and through Redwood forests, drove through Mendocino and stopped at the cliffs to overlook the ocean. We stopped at another place and hiked down to the beach and dipped our toes in the ocean and chased the seagulls that tried to eat our socks. While we stopped there we decided to find a place to stay for the night and settled on the Benbow Inn right outside the Redwood National Forest. On our way to the inn we made our first Redwood tourist stop - the drive through Chandelier Tree - quite spectacular. The Benbow Inn is hard to describe - historic, stunning, something out of a movie set and quite divine. Nestled 12 miles from the entrance to the Redwood National Forest this is the place to stay if you are ever planning on traveling through the Redwoods. After a glorious dinner and spectacular breakfast, we walked around the grounds a bit and then headed for the Redwoods. We spent all day driving the sacred 31 miles of the Avenue of the Giants. Trees that have been around since Christ walked this earth, trees that are so huge you can hardly see the tops of without nearly breaking your neck and forests that are ancient and feel as though you should speak in hushed tones as you stand among them. As we exited the Redwoods we decided to not drive for too many more hours that evening and stopped in Brookings, Oregon (we should have driven further!). The beach was spectacular and we enjoyed a breathtaking sunset. We left very early to a foggy morning with some amazing coffee from The Salty Dog in hand. We crossed beautiful bridges, caught views of the ocean and still enjoyed pieces of the Redwoods. We continued reading through Harry Potter as well - we finished book one and most of book 2 on our trip. Our goal was to make it all the way to Cannon Beach so we could enjoy one last night on the coast and a relaxing morning before heading home. We had called ahead while in Brookings and made hotel reservations at a fantastic resort on Cannon Beach called the Surfsand Resort. There is nowhere else to stay on Cannon Beach than this place!! Fantastic views, access and hook-ups with local restaurants. The staff was so helpful and when we checked in there were warm cookies in the lobby and a bottle of champagne chilling in the fridge in our room. We spent the evening walking down to Haystack Rock and playing in the tide pools (so glad we did because the next morning it was high tide and we weren't able to see the pools!). We ate at the Wayfarer Restaurant and the waitress was kind enough to switch us to a booth seat before our dinner came. The atmosphere was about 2 stars, but the food was 5 - absolutely spectacular!! The next morning we enjoyed breakfast in our room, coffee from the Sleep Monk and one last walk on the beach. Then we headed home - it was soooo hard to come home! We spent the evening having dinner at our favorite local Greek restaurant, Cafe Neo. There are hundreds of pictures to look at so I apologize for the length of the slide shows, but I hope you enjoy all the beauty we experienced.

Day Minus 1 and Zero of our trip

Days 1-3 Napa Valley

Day 4 - Driving up the coast to the Redwoods
